Tarte au Chocolat

Chocolat Tarte

He’s been named “Best Pastry Chef in the World” – Chef Christian Faure shows us how to create luxe wedding shower desserts such as a Tarte au Chocolat.

Ingredients

Pâte sablée aux amandes | Sweet pastry with almonds

  • 150 g beurre / butter
  • 2.5 g sel fin / salt
  • 62 g sucre /sugar
  • 62 g tant pour tant amandes / half-half icing sugar & almond powder
  • 2 g sucre glace vanillé / icing sugar with vanilla
  • 50 g oeufs entiers / egg
  • 75 g farine / flour
  • 175 g farine / flour

Ganache beurrée

  • 235 g lait entier / whole milk
  • 50 g crème liquide 35% mg / liquid cream at 35%
  • 325 g chocolat noir “Force noire” 50 % / dark chocolate at 50%
  • 95 g beurre / butter

Method

  1. Prepare the dough by mixing the flour, icing sugar, salt water, almond powder and eggs.
  2. Wrap in plastic wrap and let it rest in the fridge for 20 minutes. Roll the dough and put it in the mold.
  3. Bake the crust in the oven at 375 degrees farenhight
  4. Prepare the chocolate Ganache, by boiling the cream, the milk
  5. Add the melted chocolate,
  6. Add the butter
  7. Garnish the crust with the cream you just made.
  8. Keep in the fridge for 2 hours

TIP: Using a sheet of premade butter puff pastry makes this tart quick and easy to assemble.

Strawberry cream cheese half moons

This yummy portable dessert uses fresh Ontario Strawberries.  It is best served the same day it is made.

Preparation Time: 40 minutes
Baking Time: 25 minutes
Makes 12

Strawberry cream cheese half moons

Ingredients:

  • 1 cup (250 mL) diced hulled Ontario Strawberries
  • 2 tbsp (25 mL) granulated sugar
  • 1 tsp (5 mL) cornstarch
  • 3 oz (90 g) cream cheese, softened
  • 1/4 cup (50 mL) icing sugar
  • 1/2 tsp (2 mL) vanilla
  • 1-1/2 pkg (700 g, total) frozen puff pastry (3 pre-rolled sheets), thawed
  • 1 Ontario Egg Yolk
  • Garnish: Granulated and icing sugars

Method:

  1. Combine strawberries, 2 tbsp (25 mL) granulated sugar and cornstarch. Set aside.
  2. Combine cream cheese, 1/4 cup (50 mL) icing sugar and vanilla; mix well with wooden spoon until smooth. Set aside.
  3. On lightly floured surface, roll each pastry sheet into 10-inch (25 cm) square (if necessary). Using 4-inch (10 cm) round cutter, cut out 12 rounds (4 rounds from each sheet). Arrange on parchment paper-lined baking sheets.
  4. In small bowl, beat egg yolk with 1 tsp (5 mL) water; brush over edge of each round. Dollop heaping teaspoon cream cheese mixture in centre of each. Top with scant tablespoon strawberry mixture. Fold in half to form half-moon shape; pinch edges to seal.
  5. Garnish: Lightly brush each pie with egg wash; sprinkle with a little granulated sugar. With tip of paring knife, cut steam vents in centre of each.
  6. Bake in 375°F (190°C) oven for about 25 minutes or until golden brown. Let cool slightly on baking sheets then place on cooling racks. Sprinkle with icing sugar.

Phyllo pastry stuffed with chicken and leeks

Ingredients:

  • 1 roasting chicken, cooked
  • 1 tsp dried oregano
  • Fresh cracked pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 5 cups white button and Cremini mushrooms, quartered
  • Fresh thyme, chopped
  • Pinch of salt
  • ¼ cup white wine
  • 2 tbsp olive oil
  • 1 shallot, minced
  • 2 leeks, white and pale green parts, thinly sliced
  • Pinch of salt
  • 1 cup feta cheese, crumbled

Method:

  1. Remove the skin from the roasting chicken and discard. Remove the meat from the bones and chop into small pieces.  Transfer to a large bowl and season with oregano and fresh cracked pepper. Set aside.
  2. Heat the olive oil and butter in a large saucepan over medium-high heat.  Add the mushrooms, thyme and a pinch of salt.  Once the mushrooms start to release liquid, add the wine. Reduce the heat to medium and cook until the all of the liquid has evaporated.  Remove from heat and transfer to the bowl with the chicken.
  3. Heat the olive oil in the same saucepan over medium heat.  Add the shallot, leeks and pinch of salt.  Cook until the shallots and leeks are soft, about 5 minutes.  Remove from heat and transfer to the bowl with the chicken.  Set aside to cool.
  4. Add the crumbled feta cheese to the cooled filling and mix.  Your filling is now complete and ready to be added to the phyllo pastry.
  5. Melt 1/2 cup butter in a small saucepan over low heat.  Remove from the heat and skim away any foam.  Use only the clarified butter and avoid the white milk solids that have settled on the bottom of the pan.
  6. Gather two of the phyllo sheets and cover the remaining sheets with a damp cloth to avoid drying out.  Lay the two sheets of phyllo along the bottom of a 9-x13-inch (33×23 cm) shallow baking dish.  Allow the sheets to overlap in the center of the pan and the excess to hang over the sides of the pan.  Brush the sheets lightly with some of the melted butter.  Arrange another six sheets of phyllo in the same manner, brushing each sheet with melted butter.  Add the filling and spread it evenly in the pan.
  7. Gather the excess phyllo pastry hanging over the sides of the pan and fold over to enclose the filling.  Brush each layer with melted butter.  Lay the remaining two layers of phyllo pastry on the very top and allow the phyllo to wrinkle and fold to create a ruffled top. Brush with melted butter.  Cover in plastic wrap and refrigerate for 30 minutes.
  8. Remove from the refrigerator and lightly sprinkle the top of the pastry with water.  Place in the middle of a preheated oven and bake at 350°F (180°C) until golden brown and crispy, about 45 minutes.  Cut into serving pieces and serve warm or cold.

Encastry pastry of spinach and roasted red pepper

Ingredients:

  • 1 cup spinach, cooked, drained and chopped
  • ½ roasted red pepper, diced
  • ½ cup feta cheese, crumbled
  • 1 tsp fresh garlic, minced
  • 1 egg, beaten
  • 6 leaves fresh basil, chopped
  • To taste salt & pepper
  • 6 sheets phyllo dough

Method:

  1. Pre-heat toaster oven to 400F. In a large bowl mix together all of the ingredients except the Phyllo dough.
  2. Spread out the sheets of parchment on a flat surface while keeping covered with a moist towel to not dry out. Brush three pieces of Phyllo dough with melted butter and lay each piece on top of each other. Cut the dough into 2-inch wide strips.
  3. Place one tbsp of the filling on the end of each strip of Phyllo. Starting at the end with the filling, fold one corner of the dough over the spinach filling to the opposite side of the strip to form a triangle, like point folding a flag.
  4. Place the triangles onto the baking sheet pan and brush with melted butter. Bake for 15 minutes until brown and crispy. Serve with mixed greens and lemon thyme vinaigrette.
