Pumpkin spice muffins

These muffins are moist with a taste of cinnamon, nutmeg, and a crunch of pumpkin seeds! Plus, they’re gluten-, dairy-, and nut-free!

Pumpkin spice muffins

Servings: 12

Ingredients:

  • 1 1/2 cups of gluten free flour blend
  • 2 teaspoons of cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons baking soda
  • 1/2 teaspoon sea salt and black pepper
  • 1 can (15 oz) pumpkin purée (approx 1 1/2 cups)
  • 2 eggs
  • 1/4 cup coconut oil
  • 3/4 cup of maple syrup
  • 1 tablespoon vanilla extract
  • ¾ cup of pumpkin seeds

Method:

  1. Combine all of the dry ingredients. Combine all of the wet ingredients. Gently add the dry to the wet 1/2 cup at a time.
  2. Bake in oven at 350 for 20-25 minutes.
